In 2010, I got sick and tired of being sick and tired.  When I was 9 years old my mother had one of the very first stomach bypass operations, but at the time they cut out her intestines, instead of stapling the stomach.  She went though one year of sheer hell, releasing over 150 pounds.  It was physically and emotionally very taxing on me, and food quickly became an enemy to me.  I went in the opposite direction, starving myself most of the time, or going to any extreme to stay thin. I had been sick with so many different ailments throughout most of my 30’s, many issues doctors couldn’t even diagnose.  I was always in pain, and never really happy.  I have a chiropractor/healer who had been suggesting for years that I change my diet.  I would do some of the things he said but never fully committed.  Then in August of 2010, I developed a very painful gallbladder and liver problem, which was excruciating.  I then immediately got proactive.  I have never really liked Western medical doctors, and never felt that they did any good.  Why would I always be afraid to go to a doctor when they were supposed to be positive healers?  It never made sense to me.  I found a natural way to remove gallstones, and did just that.  I removed hundreds of gallstones, some big some very small, but I immediately began to get better.  At that point I realized that I have the power to heal myself naturally, and I would then take my healers advice and drop all animal out of my diet.  One day I found a local raw restaurant giving classes on how to transition to a raw food diet, and it completely resonated with me.  For months I began taking all they taught and incorporating it into my life, and I got healthier and healthier.  I have always felt that a vegetarian diet was what best suited my body, but never had the where-with-all to go raw.   I am incredibly passionate about helping people have information about food.

Healing with Food

Helping people heal themselves from diseases with food.  Also, to help them prevent disease.

Raw “Kitchen Sink” salad(I call it that because it has just about everything in it except the kitchen sink, but it’s one of my faves and people go crazy about it)!

2 handfuls of Kale (massage Kale with Olive oil first to break it down and release enzymes)

Corn off the cobb

Tomatoes

Red & Yellow Bells peppers

Kalamata olives

Rosemary

Cucumbers

Chickpeas

Chopped raw soaked almonds

Raisins

Avocados

Curry powder

@ Tbs. Veganaise with grape seed oil

Chop everything in small bite sizes.  Add curry and veganaise last them mix salad.  The avocado should be soft enough that when mixed it becomes part of the dressing.

Raw Almond Hummus

1 cup of soaked overnight raw almonds

Juice of one lemon

3 cloves of garlic

Rosemary (how ever much you like)

1/4 cup organic Tahini

1/4 cup olive oil

1/4 water

Blend everything in a food processor until completely smooth. (it takes a bit 3-4 minutes)  You may have to stop half way through and scrape down the sides)  Serve with your favorite chopped veggies, mine are red, yellow, and orange bell peppers…YUM.

Raw Pecan Pie (Always a BIG hit)!

(I didn’t make this one up, but I adapted it to fit my personality)

CRUST

1 1/2 cup Almond meal

1/3 cup soaked dates, chopped

pinch of salt

Grind until fine in a food processor, press in the bottom of a 8x8 springform pan.  It’s good to wrap the pan in saran wrap tightly before placing it in the pan so nothing sticks.

FILLING

1 cup soaked dates

1/2 cup Agave or Maple Syrup

1/4 cup Coconut oil – melted

1 Tb. Molasses

1/2 tsp. Vanilla

2 1/2 cups Pecan Halves

Blend everything except nuts until smooth, toss in nuts stir, then pour over top of crust.

Chill to set.
